Asian-style glazed rainbow trout for one

If you’re craving a dish full of umami and packed with sweet, salty, and tangy flavours, this Asian-style glazed rainbow trout recipe is just what you need. It’s a quick and easy meal, perfect for one person, and pairs wonderfully with jasmine rice and stir-fried broccoli. The caramelised glaze gives the trout a beautiful, rich finish, making it an impressive yet simple dish.

A healthy meal for one:

1 whole rainbow trout (head removed if desired)
2 tbsp soy sauce
1 tbsp runny honey
1 tbsp rice vinegar (or lemon juice)
1 tsp sesame oil
1 tsp freshly grated ginger
1 garlic clove, crushed and minced
½ tsp dried chilli flakes or 1 small fresh chilli, sliced
1 tsp sesame seeds (for garnish)
1 tbsp vegetable oil (for cooking)

Prepare the glaze – In a small bowl, combine the soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and chilli flakes. Mix well.

Marinate the trout – Place the trout in a shallow dish and pour half of the glaze over it. Allow it to marinate for 15–20 minutes.

Cook the trout – Heat the vegetable oil in a pan over medium heat. Add the trout, skin-side down, and cook for 3–4 minutes until crispy. Flip and cook for an additional 2 minutes.

Caramelise the glaze – Pour the remaining glaze into the pan, allowing it to bubble for 1–2 minutes, coating the trout as the sauce thickens.

Serve – Sprinkle with sesame seeds and serve with steamed jasmine rice and stir-fried broccoli or your choice of greens.
