Quick Beef Broth for Football Night
It’s football night, you’re hungry, and you don’t want to spend ages in the kitchen. Enter this quick beef broth, bulked out with white beans for extra heartiness.
It’s fast, tasty, and perfect for one, but you could easily scale it up if needed.

Ingredients (serves 1)
180 g beef mince
Small tin caramelised onions
~400 ml stock of choice
1–2 cloves garlic
1–2 handfuls chopped vegetables (carrot, celery, bell pepper, courgette, cabbage…)
Half a jar of white beans, drained and rinsed
Herbs (thyme, parsley, or bay leaf)
Celery salt & pepper to taste
A drizzle of oil
Method for a Quick Beef Broth
- Heat a little oil in a small saucepan and brown the beef mince, breaking it up as it cooks.
- Stir in the caramelised onions and garlic and cook for 1–2 minutes.
- Add your chopped vegetables and white beans, giving everything a quick stir to coat.
- Pour in the stock, bring to a gentle simmer, and add herbs if you like.
- Simmer for 10–15 minutes, until the vegetables are tender and the flavours meld.
- Taste and season with celery salt and pepper.
Serving Tips
Serve straight from the pot for a comforting, hearty bowl.
Garnish with fresh parsley or a squeeze of lemon to brighten it up.
Pair with crusty bread or a cheese toastie if you’re extra hungry while watching the match.
