Creating BBQ style chicken on a gas hob in a campervan has never been easier, and this RidgeMonkey chicken recipe proves it.

3 skin on chicken drumsticks
Olive oil
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp dried thyme or oregano
½ tsp black pepper
½ tsp sea salt
Pinch chilli flakes

Prep the Chicken

Rub the drumsticks with a little oil then place them inside a food grade bag.

Sprinkle the spice mix over them and rub it in well.

Add ½ tsp soy sauce and rub again — this boosts the savoury flavour and helps the spices stick.

Cook Your RidgeMonkey Chicken

Heat your RidgeMonkey with a little oil on medium heat.

Brown the drumsticks for 6–8 minutes, turning so the skin colours evenly.

Close the lid and cook on low–medium for 15 minutes, turning every 4–5 minutes.

Total time: about 22–25 minutes.

The Campervan Chef Trick

Right at the end, add ½ tsp Worcestershire sauce and 1 tbsp water to the pan and roll the RidgeMonkey chicken in it. It will bubble and coat the drumsticks with a savoury glaze — as close as you will get to BBQ chicken without charcoal.


We were parked up on the Camino de Aceite — the old olive oil route that winds through the heart of Andalucía. For centuries, mule trains carried olive oil along these tracks from the groves of Jaén down to Córdoba. Today it's a quiet, scenic trail popular with cyclists and walkers. Not a bad spot to cook RidgeMonkey chicken, fire up the gas hob and watch the light fade over the olive trees.
