Easy Ridge Monkey Rabbit with Green Peppers and Chillies

Rabbit RidgeMonkey recipe territory, this one — a whole rabbit cut into pieces, browned in the pan, then left to simmer low and slow with green peppers, chillies, tomatoes and garlic until it falls away from the bone. Cooked on the gas hob in Florie, it's a proper one-pot van dinner that tastes considerably more ambitious than the effort involved. Technically it serves two, though in practice it's one person and two dogs — and yes, I remove the peppers and chillies before their share reaches the bowl.

Rabbit RidgeMonkey Recipe — Ingredients

1 whole rabbit, cut into pieces
2 small green peppers, sliced
2 chillies, sliced (I used one whole fresh chilli and one small dried, depends your heat preference
1 small onion, finely chopped
3 cloves garlic, crushed and minced
2 tomatoes, chopped
Olive oil
Salt and pepper to taste
Fresh parsley, chopped

Season the rabbit pieces with salt and pepper
In a RidgeMonkey or frying pan, heat the olive oil over medium-high heat.
Add the rabbit pieces and brown them on all sides, which should take about 5-7 minutes.
Once browned, remove the rabbit from the pan and set aside.
In the same pan, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
Add the sliced green peppers and chillies, cooking until they start to soften.
Add the chopped tomatoes to the pan and cook for another 2-3 minutes until they begin to break down.
Return the browned rabbit pieces to the pan.
Reduce the heat to low, cover, and let it simmer for about 30-40 minutes, or until the rabbit is tender and cooked through.
Taste and adjust seasoning with salt and pepper if needed. Garnish with fresh chopped parsley before serving.
