I have a confession. When I opened the veggie drawer in the fridge, there it was — a swede I’d picked up in Alicante last Friday. It had been quietly waiting for me, and I couldn’t resist turning it into a sweet, creamy carrot and swede mash to go with my cosy December feast. Sometimes the simplest ingredients spark the most comforting meals.

Slow-Cooked Chicken Leg with Three Vegetable Sides

It’s the first week of December. The temperature has dropped, and a few days of persistent showers have put the olive harvest on pause. Perfect excuse to stay inside, wrap myself in a blanket of kitchen aromas, and slow-cook a chicken leg. As it gently releases its fat, the room fills with that irresistible, golden scent — the kind that whispers “comfort food.”

I wanted something hearty but simple, so I paired the chicken with three vegetable sides: sautéed spinach garlic, Spanish-style potatoes, and that sweet, creamy carrot and swede mash. Designed for one hungry person, but easily scaled up for more — because comfort is better shared.

Ingredients

2–3 medium carrots, chopped

½ small swede, chopped

1 garlic clove

1–2 tbsp olive oil

Sea salt & pepper

Squeeze of lemon

Method

  1. Boil the carrots and swede with the garlic clove until very soft, about 20–25 minutes. Let them gently bubble away while you prep the other sides — the scent alone is already comforting.
  2. Drain and mash with olive oil, seasoning, and a squeeze of lemon.

Ingredients

150g frozen spinach, thawed and squeezed dry

1 garlic clove, finely sliced

A few thin slices of fresh red chilli (to taste)

1 tsp olive oil or butter

Sea salt & pepper

Drizzle of olive oil to finish

Method

  1. Heat the olive oil or butter in a pan.
  2. Add garlic and chilli, cooking gently for 20–30 seconds until fragrant. Avoid browning the garlic — you want sweetness, not bitterness.
  3. Add spinach and cook for 2–3 minutes until hot and glossy.
  4. Season and finish with a drizzle of good olive oil.

💡 Tip: Squeeze excess water from the spinach before cooking so it sautés rather than steams. The chilli lifts the richness of the chicken and adds a lovely seasonal warmth.

🥔 Spanish-Style Potatoes – Rustic, Smoky, and Soulful

Ingredients

1 large potato, thinly sliced

½ small onion, thinly sliced

1 garlic clove, sliced

A handful of green beans

Olive oil

Pinch smoked paprika

Sea salt & pepper

Method

  1. Cook potato and onion slowly in olive oil for 15–20 minutes until soft and slightly caramelised.
  2. Add garlic and smoked paprika, stirring to coat.
  3. Add green beans with a splash of water, cover, and steam until tender.
  4. Uncover and let everything take on a little colour.

💡 Tip: Thinly slice the potatoes for faster cooking and crispy edges. For extra flavour, drizzle a bit of the chicken fat over the pan before serving — magic in every bite.

Put the carrots and swede on to boil first — they can happily bubble away.

Start the potatoes & onions so they cook slowly and soak up flavour.

Make the spinach garlic just before serving so it stays bright and fresh.

  1. Hi. I confess that this year I am determined to cut back on takeaways. To be honest, I didn't like cooking until I latched onto your love of chicken. I love chicken too—chicken curry, Chinese chicken, chicken burgers, etc.—but I was spending a fortune on them, and yes, I know they're full of fat. I have started to buy a fresh free-range chicken from Tesco for less than a tenner, and following your suggestion, I cut it up into several meals, including making a stock with the bones and trimmings. My friends don't believe that I am turning into a home cook!

    Anyway, so far so good; I have only had one takeaway this month, and that's because I went to the pub with work colleagues for a couple of pints. Well, you know how that goes!
