Slow-Cooked Pork Solomillo in a Rich Tomato Sauce

Cooking pork solomillo (tenderloin) in a slow cooker allows it to become incredibly tender while absorbing all the delicious flavours of a rich tomato sauce. This recipe is easy to prepare and perfect for a comforting meal. You can also substitute turkey solomillo, adjusting the cooking time accordingly.

Ingredients for Slow-Cooked Pork Solomillo

1 pork solomillo (500g - 600g) or turkey solomillo (adjust cooking time)
2 tablespoons olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 carrot, peeled and diced
1 celery stalk, chopped
400g tin of tomatoes
240ml dry white wine (or chicken stock)
1 tablespoon tomato purée
1 teaspoon dried oregano
1 teaspoon dried thyme
1 bay leaf
Pinch red chilli flakes
Sea salt and pepper, to taste
Fresh parsley for garnish

Instructions:

  1. Start by searing the meat to lock in the juices for your slow-cooked pork solomillo.

Heat the olive oil in a large pan over medium-high heat.

Season the pork with sea salt and pepper.

Sear on all sides until browned (4-5 minutes). This enhances the flavour but is optional for turkey.

  1. Prepare the Sauce

In the same pan, add more olive oil if needed.

Sauté the onion, garlic, carrot, and celery for 5-6 minutes until softened.

Stir in the tomato purée and chilli flakes, cooking for another 1-2 minutes.

  1. Transfer to the Slow Cooker

Place the seared pork in the slow cooker.

Add the sautéed vegetables, tinned tomatoes, white wine (or stock), oregano, thyme, and bay leaf.

Season with salt and pepper.

  1. Once the timer is up, your slow-cooked pork solomillo should be fork-tender.

Cover and cook on low for 6-8 hours or high for 3-4 hours (adjust for turkey: low for 4-5 hours, high for 2-3 hours).

  1. Finish the Dish

Remove the pork and slice it into medallions.

Discard the bay leaf and adjust seasoning if needed.

  1. Serve

Serve the pork with the tomato sauce over mashed potatoes, rice, or vegetables.

Garnish with fresh parsley.

Tips:

For a thicker sauce, simmer it in a pan for 10-15 minutes to reduce.

This dish pairs well with potatoes or pasta for a hearty meal.
