Tomate triturado is crushed tomatoes which you can easily buy in tins here in Spain. It is not as dense as passata or tomate frito and makes a rather special tomato sauce for pasta or anything else that calls for tomato sauce.
 
It takes a short time and a few ingredients to make this scrumdiddlyumptious sauce.
 
Add 2T olive oil to a pan over low medium heat and add one onion, blitzed in a blender. Gently fry with a pinch of sea salt until soft but not brown. Be careful not to burn.
 
Add finely grated garlic (5 cloves), stir and cook for a minute or so.
 
Add 1t dried basil, good pinch or two of red chilli flakes, ground black pepper and ½t sugar. Stir and cook for two minutes
 
Add 800g can of triturado. Stir and continue cooking. Gently cook for 10 minutes, adding water as necessary.
 
Towards the end of cooking add a large knob of butter. When melted and mixed well the sauce is ready.
