In Vietnam these would be wrapped in rice paper but living in rural Andalucía we use lettuce instead although you could use tortilla wraps but for this I prefer the freshness of the lettuce.

8 small lettuce leaves, rinsed and patted dry with kitchen roll
16 cooked medium sized prawns, chopped
Handful roughly torn coriander leaves
1 large carrot, peeled and shredded
1 large spring onion, finely chopped

Take a lettuce leaf and coat one side with hot mustard sauce. On the same side fill with the remainder of the ingredients so it looks like an open sandwich, allow your guests to roll them up. It is finger food don’t forget.

The heat for hot mustard sauce comes from Spanish grown habañero chillies and it also contains honey which gives a great finish to this simple wrap.
