Easy RidgeMonkey Spicy Chicken Wings for Van Life Cooking.
To make Spicy Chicken Wings is easy for me when I'm in my camper van using my RidgeMonkey and a plastic food bag.
How to Prepare the Chicken Wings
First up is to separate the wings. These parts can be separated by cutting through the joints that connect them. Set aside the wing tips, which can be used in stock. This leaves the meaty section that resembles a small drumstick and has a single bone running through it. The other part is flat, the middle section, and has two parallel bones. It has skin on both sides and contains a good amount of meat.
The Dry Rub
- 1 tsp smoked paprika
- 1 tsp cayenne pepper (adjust depending on how hot you like it)
- ½ tsp chilli powder
- 1 tbsp black pepper
- 1 tsp garlic powder
- ½ tsp onion powder
- Pinch of turmeric
- Pinch of sea salt
- Big pinch of Herbes de Provence
- ½ tsp dried thyme
Place the chicken pieces in a plastic food bag together with the dry rub. Shake until everything is coated.
Warm up olive oil in a RidgeMonkey or frying pan with a lid. When the oil is shimmering, add the chicken pieces and brown them, which should take 5-7 minutes. Once browned all over, add sliced vegetables of your choice, such as red onion, green pepper, celery, green beans, etc., and cover with a lid. Continue to cook for 20-25 minutes, depending on the size of the chicken wing pieces. Turn occasionally.
