A Fridge-Raid Feast: Greek Lemon Potatoes at Home
With a road trip in my campervan just around the corner, I’m trying to use up what’s left in the fridge before I go. Today, that meant getting creative with a few odds and ends: potatoes, homemade tuna pâté, green beans, broccoli, and a handful of store cupboard basics. It might sound like slim pickings, but it turned into a delicious and comforting bit of solo cooking.
The real hero of the plate was a simple Greek lemon potatoes recipe—tangy, garlicky, and roasted until golden. It’s easy, flavour-packed, and makes even the barest fridge feel full of promise.

Greek Lemon Potatoes (Solo Version)
Electric Oven | Serves 1 hungry person
300–350g waxy potatoes, cut into chunks
2 tbsp olive oil
1 or 2 garlic cloves, crushed
Juice & zest of ½ lemon
1 tsp dried wild oregano from the Sierra de Gata
100 ml chicken stock
Sea salt & pepper
Instructions:
Preheat your oven to 200°C (180°C fan). Mix oil, lemon, garlic, herbs, and stock in a small roasting tin. Toss in the potatoes to coat, cover tightly with foil and roast for 40 minutes. Remove the foil and roast for another 30 minutes, turning occasionally until crisp and golden.
Plating It Up
While the Greek lemon potatoes roast, steam the broccoli and green beans just until tender. Serve with a generous spoonful of your tuna pâté recipe on the side, a drizzle of olive oil over the greens, and perhaps a squeeze more lemon.
Final Touches
I opened a slightly chilled bottle of Tempranillo, and it turned out to be a gorgeous pairing—even if it’s not the classic choice. It gave the whole meal this rustic, Spanish‑meets‑Greek kind of charm.
If you’ve got chilli flakes, olives, or a bit of sourdough bread to mop up the lemony juices, even better. Sometimes solo cooking brings the best surprises!
