Procol Harum once wrote a song in wholehearted praise of fruit — the sentiment being that nothing on earth quite matches it. Hard to argue with that, especially when fruit makes a dessert this good with almost no effort at all.

I love using fresh fruit as a dessert, and this one simply popped into my head one day. It has stayed there ever since.

How to Make Baked Banana with Lychees

Ingredients

  • 1 banana
  • Lychees — tinned is fine; fresh are yet to make an appearance in Andalucía
  • Fresh ginger, grated
  • Runny honey
  • Crème fraîche, to serve

Method

Split the banana lengthways and place into a baking dish. Surround with lychees and drizzle over a little of the juice from the tin.

Sprinkle with freshly grated ginger, then drizzle generously with honey.

Bake in a hot oven for around 20 minutes until the banana is soft and caramelised at the edges and the lychees are warmed through.

Serve with a good spoonful of crème fraîche alongside. This baked banana with lychees is the kind of easy fruit dessert that asks very little of you and delivers rather more than you'd expect.
