A couple of months ago, I was chatting with my hunting neighbour, and—trying to sound casual—I slipped in, “Hopefully, I’ll have a couple of partridges, please.” Well, lo and behold, he knocked on my door a few weeks later and handed over two fresh wild partridges. Lovely gesture. Not so lovely? Having to pluck and draw them!

If you're wondering how to cook a partridge for one, this is as simple as it gets. The bird is stuffed with garlic, onion, and dried mushrooms; roasted until golden; and served with thyme-roast potatoes and lightly boiled green beans — classic, seasonal, and absolutely delicious.

Butter-roasted Wild Partridge recipe

Ingredients (Serves 1)

For the partridge:

1 wild partridge, cleaned, plucked and drawn

25g unsalted butter, softened

1 clove garlic, finely chopped

½ small red or yellow onion, finely chopped

12g dried mushrooms (porcini or mixed wild), soaked in 25ml warm water for 20–30 mins, drained and chopped

Salt and freshly ground black pepper

Optional: small sprig of thyme or rosemary for basting

For the sides:

Small chunks of potato, par-boiled

Olive oil, dried thyme, sea salt, black pepper

Fresh green beans, trimmed

How to Cook a Wild Partridge Recipe for One

1. Prepare the stuffing:

Heat a tiny knob of butter in a pan and sauté garlic and onion until soft.

Add the drained mushrooms and cook 1–2 minutes. Season lightly with salt and pepper and set aside to cool.

2. Stuff and prep the partridge:

Fill the cavity with the mushroom-onion-garlic mixture.

Rub the outside with butter, season with salt and pepper, and optionally tuck in thyme or rosemary.

3. Roast potatoes:

Toss par-boiled potato chunks with olive oil, dried thyme, black pepper, and sea salt.

Roast in the oven until golden and crisp.

4. Roast the partridge:

Place breast-side up in a roasting tray and cook for 20–25 minutes, basting once or twice.

Skin should be golden and crisp; juices should run clear.

5. Cook the green beans:

Lightly boil for 3–4 minutes, then refresh in cold water. Season with a little olive oil or butter.

6. Rest and serve:

Rest the partridge under foil for 5–10 minutes.

Carve carefully; serve with stuffing, roast potatoes, and green beans. Drizzle pan juices over the bird.
