Butterflied Sardines Recipe
Saturday lunch in Monte Lope Álvarez. I picked up fresh sardines from Martha’s store yesterday, knowing exactly what I’d do with them. This butterflied sardines recipe is fast, fiery, and perfect for one hungry bloke.

No garnish. No dipping sauce. Just crisp, salty heat and a squeeze of lemon. That’s all they need.
These aren’t boquerones. Sardines are meatier, firmer, and ideal for butterflying. Boquerones are softer, better marinated or fried whole. Different fish, different mood.
I fry them in olive oil until golden, coated in breadcrumbs, red chilli flakes, and plenty of ground black pepper. Then I serve them with a cold beer. Maybe two. That’s lunch sorted.
The Butterflied Sardines Recipe
Serves: 1 hungry bloke
Time: 20 minutes
Best enjoyed with: A cold beer and a wedge of lemon
Ingredients:
- 6 fresh sardines, butterflied and cleaned
- 3 tbsp breadcrumbs
- ½ tsp red chilli flakes
- 1 tsp freshly ground black pepper
- Olive oil for frying
- Sea salt to finish
- Lemon wedge, for serving
Method:
- Prep the coating: Mix breadcrumbs, chilli flakes, and black pepper in a shallow bowl.
- Coat the sardines: Press each butterflied sardine into the mixture, flesh side down.
- Fry: Heat olive oil in a pan over medium-high heat. Fry sardines skin side down for 2–3 minutes, then flip and cook another minute until golden.
- Serve: Sprinkle with sea salt, add a lemon wedge, and crack open a beer.
Who knew six little sardines could cause so much joy? Crispy, spicy, and begging to be eaten straight from the pan, they’re the perfect lunchtime mischief. Lemon, beer, and a satisfied grin: that’s all you need.

P.S. The original version of this recipe — published here in 2013 — ended with a note to 'all males' about the romantic potential of butterflied sardines. I've since revised my expectations. The sardines remain excellent.
