Chicken and Sweet Potato Curry Recipe with Base Gravy

This chicken and sweet potato curry is one of my favourite quick weeknight meals. It uses precooked chicken and base gravy, so it comes together in under 30 minutes. The sweet potato adds a gentle sweetness that balances the spices beautifully, and a dollop of cream or coconut milk at the end makes it wonderfully rich. Simple, satisfying, and endlessly adaptable.

Chicken and Sweet Potato Curry Recipe: Ingredients

1 chicken breast or 2 thighs, cooked and cut into bite-sized pieces
1 medium sweet potato, peeled and cubed
200–250ml base gravy
1 tablespoon vegetable oil
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon chilli powder
½ teaspoon garam masala
1 teaspoon dried fenugreek leaves (kasuri methi)
1 ripe tomato, quartered
Cream, coconut milk or yoghurt (optional, for a creamy finish)

How to Make Chicken and Sweet Potato Curry

  1. Boil the sweet potato chunks until just starting to soften — about 8 minutes. Don't overcook or they'll turn to mush. Drain and leave to steam dry.
  2. In a separate pan, cook the chicken pieces in a small amount of base gravy until cooked through. Set aside.
  3. In a small frying pan, warm the vegetable oil over medium heat. Add the ground coriander, cumin and chilli powder. Stir and cook for one minute.
  4. Add the base gravy, stir and cook until it darkens and thickens — about 3–4 minutes.
  5. Add the garam masala. Stir and cook for another minute.
  6. Add the chicken and sweet potato. Stir gently and cook until warmed through.
  7. Add the quartered tomato and fenugreek leaves. Stir through.
  8. For a creamy curry, stir in a dollop of cream, coconut milk or yoghurt. Serve immediately.

What to Serve with Chicken and Sweet Potato Curry


This chicken and sweet potato curry recipe works beautifully with Saag Bhaji, Bombay Aloo, or fried basmati rice. If you want to build a full curry night for one, the Dishoom onion and tomato masala makes a brilliant accompaniment — stir a spoonful through the sauce for extra depth.
