Chicken Meatballs Kiev — Stuffed with Garlic Butter, Cooked in the RidgeMonkey

These chicken meatballs Kiev came together at Complejo Rural Los Cortijos de Noalejo, a working farm outside the town of Noalejo — proper agricultural Andalucía, with a dedicated space for campervans and motorhomes tucked into the landscape. From the pitch you get a view of the Sierra Nevada that makes sitting still feel entirely justified. It was sweltering when I arrived, but there's shade, and in the evenings the temperature drops just enough to make cooking feel like a reasonable idea.

I had 200g of chicken mince, a small USB blender, a mortar and pestle, and the RidgeMonkey. That was enough.

The Kiev element came from freezing the garlic butter first — a trick that makes stuffing meatballs considerably less frustrating. The butter goes into the freezer while you make the meatballs, firms up enough to handle, and then gets pressed into the centre before the meatball closes around it. When it hits the hot pan, it melts from the inside out. Proper Kiev logic, miniaturised.


Chicken Meatballs Kiev

Serves 1 | RidgeMonkey | Campervan-friendly

For the garlic butter

  • Softened butter — enough to fill a generous tablespoon or so
  • 1–2 garlic cloves, microplaned or very finely minced
  • Fresh flat-leaf parsley, finely chopped
  • Black pepper

For the meatballs

  • 200g chicken mince
  • Parmesan, blitzed fine in a small USB blender — a good handful
  • 1 small onion, very finely chopped and softened in a little oil first
  • Fresh flat-leaf parsley, chopped
  • Plenty of black pepper

For the pan sauce

  • Splash of chicken stock, to deglaze
  • Tomato purée — a good splodge
  • Dijon mustard — another splodge
  • White pepper
  • Smoked paprika

Method

  1. Make the garlic butter first. Mix softened butter with the garlic, parsley, and black pepper. Shape into a rough log or flatten onto a small piece of cling film, wrap, and put in the freezer for at least 30 minutes until firm.
  2. Soften the onion in a little oil until translucent. Set aside to cool slightly.
  3. Mix the chicken mince with the blitzed Parmesan, softened onion, parsley, and plenty of black pepper. Work it together well — the mix needs to be cohesive enough to hold a filling. Divide into 3 equal portions — roughly golf ball size.
  4. Divide the mix into portions. Take a portion, flatten it in your palm, cut a piece of the frozen garlic butter and place it in the centre, then close the meatball around it, sealing the edges firmly. Repeat with the rest. Refrigerate for 30 minutes to firm up.
  5. Heat the RidgeMonkey over a medium-high flame. Add a little oil and cook the meatballs, turning, until golden on all sides and cooked through — the garlic butter will be melting inside by now.
  6. Remove the meatballs and set aside. Deglaze the pan with a splash of chicken stock, scraping up the bits. Add the tomato purée, Dijon, white pepper, and paprika. Stir and let it reduce slightly into a loose sauce.
  7. Return the meatballs to the pan, coat in the sauce, and serve in a bowl. Bread alongside if you have it — the sauce earns it.

The first meatball will release garlic butter the moment you cut into it. The second one will too. That's the point.
