Chickpea Flatbread Recipe for Vanlife Cooking

120g chickpea flour (also known as gram flour or besan)
180ml bottled water
1 tbsp olive oil (plus more for the pan)
½ tsp sea salt
Optional:
½ tsp cumin or smoked paprika
A pinch of chopped rosemary or thyme
Black pepper or chilli flakes
Instructions:
- Mix the Batter:
In a bowl, whisk together the chickpea flour, salt, and any optional spices for your vanlife cooking. Slowly add water while whisking to avoid lumps. Stir in the olive oil, and let the batter rest for 15–30 minutes to hydrate the flour.
- Cook the Flatbreads:
Heat a non-stick frying pan or cast iron skillet over medium-high heat. Drizzle a little olive oil to coat the pan. Pour in a ladleful of batter and tilt the pan to spread it out—thicker than a crêpe, thinner than a pancake. Cook for 2–3 minutes until bubbles form and the underside is golden. Flip and cook for another 2–3 minutes until both sides are golden brown.
- Serve:
