Not the chicken feet and black mushroom soup I once braved in Yunnan (my only culinary regret in six trips to China), but something far more inviting: Chinese beef mince noodle soup. This bowl is everything I want in a quick, soul-hugging meal – savoury beef, slurpable noodles, and a broth that hits all the right notes.

Soy Ginger Broth: The Soul of the Soup

The magic of this soup lies in its soy ginger broth. It’s a simple base, but it carries depth thanks to the combination of light and dark soy sauces, rice vinegar, and freshly grated ginger. The white pepper adds a gentle heat that lingers just enough to keep things interesting.
