At a dinner party with friends last night the subject of Dukkah came up.
Dukkah is a unique Egyptian blend of toasted nuts, seeds and spices — the kind of thing that turns simple bread and olive oil into proper finger food, shared between friends. It's simple to prepare: you dip fresh bread in the oil, then in the Dukkah, and it's nearly heaven.

It also happens to be one of the most flexible things you can keep in a jar. Beyond the classic bread-and-oil ritual, this Dukkah recipe works scattered over roasted vegetables, stirred through hummus, pressed onto a piece of pan-seared fish or chicken before cooking, or simply spooned over yoghurt for something unexpected at breakfast.

How to Make Dukkah
Ingredients
- 100g hazelnuts
- 50g coriander seeds
- 3 tbsp sesame seeds
- 2 tbsp cumin seeds
- 1 tbsp black peppercorns
- 1 tsp fennel seeds
- 1 tsp dried mint leaves
- 1 tsp sea salt crystals
Method
Dry roast the hazelnuts until slightly browned and fragrant, being careful that they don't burn. Repeat the process with each of the seeds and the peppercorns individually, since they toast at different rates. Allow each of them to cool completely before moving on.
Place the nuts and seeds, along with the mint and salt, into a mortar and pound until the mixture is crushed — or pulse in a food processor to a coarse consistency. Don't let it go too far; you want texture, not a paste.
Store this Dukkah recipe in an airtight container in a cool place for up to one month.

This looks easy and quick. It should come handy for me to have for the breakfast every morning. It will save my time and will also be a really healthy morning meal quickly when on the go!
My kids will love this. It is quite healthy meal for them at any given time. It’s also tasty so no more faces made.
Just found this and am going to use it when entertaining this weekend. I have everything in my store cupboard except dried mint. I'll have to make my own!
