One-Pan Greek Lemon Chicken and Potatoes — A Van Kitchen Recipe

We found the spot by following a track that probably wasn't made for a Fiat Ducato. It might have been made by animals. It was narrow, uneven, and went on longer than felt sensible — but it opened out onto a flat piece of ground overlooking the Embalse de Finisterre, in Toledo province, with nothing around us but water and sky and a warm April evening. Issy approved. We stayed the night.

This one-pan greek lemon chicken and potatoes recipe is what I cooked that evening. One pan, one burner, twenty-five minutes. The lemon does most of the work — the zest goes into the marinade, the juice goes in at the end, and the squeezed half sits on the plate because it looks right and occasionally gets an extra squeeze. The potatoes absorb everything the chicken gives off. The oregano is non-negotiable.

Greek Lemon Chicken and Potatoes — Van Kitchen

Ingredients

Chicken

  • 2 chicken thighs, bone-in, skin-on (about 250–300g total)

Potatoes

  • 1 large potato (about 220–250g), cut into chunky pieces

Greek flavour base

  • Zest of ½ lemon
  • Juice of ½ lemon
  • 2 garlic cloves, grated or finely chopped
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 1 tbsp olive oil (for the marinade)
  • 2–3 tbsp olive oil (for cooking)
  • ½ tsp sea salt
  • Generous grind of black pepper

Optional Greek touches

  • Splash of white wine (20–30ml)
  • Pinch of smoked paprika
  • Fresh parsley or mint to finish

Method

  1. Mix the lemon zest, half the garlic, oregano, thyme, 1 tbsp olive oil, salt and pepper in a bowl. Add the chicken thighs and turn to coat. Leave for 10 minutes if you have time — even a short marinade makes a difference.
  2. Parboil the potato chunks in salted water for 8 minutes until just beginning to soften. Drain and set aside.
  3. Heat 2 tbsp olive oil in a frying pan over a medium-high heat. Place the chicken thighs skin-side down and cook without moving them for 6–8 minutes until the skin is deep golden and beginning to crisp.
  4. Flip the chicken. Add the remaining garlic and the potatoes to the pan. Add the splash of white wine if using. Cook for a further 12–15 minutes, turning the potatoes occasionally, until the chicken is cooked through and the potatoes have picked up colour from the pan.
  5. Add the lemon juice. Let it sizzle and reduce for a minute, coating everything in the pan. Taste and season.
  6. Serve straight from the pan — or on a paper plate, overlooking a reservoir, with the squeezed lemon half alongside for good measure.

Recipe Notes

  • Two thighs is the right call here. One is never quite enough — the pan looks wrong and so does the plate.
  • Don't rush the skin. Six to eight minutes skin-side down without moving is what gives you the colour. Lift it too soon and it sticks; leave it and it releases cleanly.
  • The parboil matters. Raw potato chunks won't cook through in the time the chicken needs — parboiling first means they finish together.
  • White wine is optional but worth it if you have a small bottle in the van. It lifts the whole pan.
  • Smoked paprika is a Spanish addition that works well here — a pinch into the marinade adds warmth without changing the character of the dish.
