Green Tomato Chutney: A Small-Batch Preserve Inspired by My La Caja Saludable Box

Some ingredients arrive with a kind of quiet charisma. They don’t demand attention — they simply sit on the counter, glowing with potential, waiting for you to decide what they’ll become. That’s exactly how the crisp green tomatoes from my recent La Caja Saludable fresh produce box felt. Firm, bright, slightly sweet, and just unusual enough to spark a new kitchen adventure.

If you’ve read my La Caja Saludable Review, you’ll know how much I enjoy the way these boxes nudge me into unexpected flavours. This week’s nudge led straight to a pot of chutney — but not the heavy, dark, wintery kind. I wanted something fresh, small‑batch, and long‑keeper friendly. A chutney that would stay bright in the fridge for weeks, travel well in the campervan, and work across cheese boards, roast meats, and quick lunches at Casa Adora.

These tomatoes — marketed as a new category with a sweet–acid snap and a crunchy bite — are perfect for a preserve that keeps its colour and character. With a little extra acidity and a slow reduction, this chutney lasts up to a month in the fridge without losing its sparkle.

Casa Adora Long‑Keeper Green Tomato Chutney

Ingredients

  • 400g green tomatoes, chopped
  • 1 medium onion, finely diced
  • 2 tbsp honey or ½ tsp stevia (adjust to taste)
  • 80ml apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tsp mustard seeds
  • ½ tsp coriander seeds, lightly crushed
  • ½ tsp grated ginger
  • Pinch of salt
  • Optional: a pinch of chilli flakes

Method

  • Gently cook the onion with the mustard seeds until soft and fragrant.
  • Add tomatoes, vinegar, lemon juice, ginger, coriander seeds, honey/stevia, and salt.
  • Simmer on low for 25–30 minutes, stirring occasionally, until thickened and glossy.
  • Taste and adjust the balance of sweetness and acidity.
  • Jar while hot in clean jars, cool, and refrigerate.
  • Keeps for up to a month thanks to the higher acidity and slower reduction.

How to Use Green Tomato Chutney
This chutney is wonderfully versatile. Try it with:

  • Manchego, Payoyo, or a young goat cheese
  • Grilled pork or chicken
  • A tortilla española lunch plate
  • Warm lentils with olive oil
  • A campervan toastie with cured ham

It’s the kind of preserve that quietly earns its place in the fridge – the one you reach for instinctively because it just works.
