I am currently preparing for friends coming for lunch next week. This quick and easy spice will make salt and pepper prawns a doddle to cook on the day.

Grind the following in a pestle and mortar or spice grinder.

1 tablespoon Chinese Sechuan peppercorns, lightly toasted
6 black peppercorns, lightly toasted
1 tablespoon celery salt
Large pinch chilli flakes
