This Hungarian mushroom soup came to me via a friend in Spain — she wasn't entirely sure whether her heritage was Hungarian or Romanian, but she was absolutely certain about the recipe. One bowl and I stopped caring about the provenance. Rich, paprika-warmed, finished with sour cream and a squeeze of lemon — it's the kind of soup that earns its place on a cold evening without any fuss.

Why This Hungarian Mushroom Soup Works
Brown mushrooms bring an earthiness that the paprika deepens rather than masks. Soy sauce adds a quiet umami backbone — you won't taste it directly, but you'd notice if it wasn't there. The sour cream finish gives the soup its characteristic creamy tang, and the lemon juice at the end lifts everything just enough. It's a proper bowl.
Ingredients (Serves 2)
- 2 tbsp unsalted butter
- 1 large onion, finely chopped
- 200g fresh brown mushrooms, sliced
- 250ml vegetable or chicken stock
- A generous splash of soy sauce
- 1 tsp paprika
- 1 tsp dried dill
- 200ml whole milk
- 1 tbsp plain flour
- 100ml sour cream
- A small handful of fresh parsley, chopped
- 1 tsp lemon juice
- A pinch of chilli powder
- A pinch of celery salt
- A pinch of white pepper
Method
Build the base
Melt the butter in a large pan over medium heat. Add the onion and cook for 5 minutes, stirring occasionally, until soft and translucent. Add the mushrooms and sauté for a further 5 minutes until they've released their liquid and started to colour.
Simmer
Stir in the stock, soy sauce, paprika and dried dill. Reduce the heat to low, cover and simmer for 15 minutes.
Thicken
In a small bowl, whisk the milk and flour together until smooth. Gradually stir this into the soup. Cover and simmer for a further 15 minutes, stirring occasionally to prevent sticking.
Finish
Stir in the sour cream, parsley, lemon juice, chilli powder, celery salt and white pepper. Cook over a low heat for 3–5 minutes until warmed through and well combined. Taste and adjust seasoning.
Serve
Ladle into warm bowls and serve immediately with crusty bread.
Cook's Notes
Smoked paprika works beautifully here if you want a deeper, more complex flavour — or use a mix of smoked and sweet. If you're cooking for one, this keeps well in the fridge for two days and reheats gently on the hob with a splash of stock to loosen.
