Small bunch fresh coriander
Thumb-size piece of fresh ginger, grated
1 red chilli, finely chopped
2 garlic cloves, grated
1 tablespoon olive oil
Knob of butter
½ tablespoon honey
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon sweet paprika
1 teaspoon smoked paprika
¼ teaspoon cayenne pepper
¼ teaspoon turmeric
Lemon juice (½ lemon)
sea salt and freshly ground black pepper
Preheat your oven to 180°C (fan).
Place all marinade ingredients in a blender and blitz.
Slice two ‘steaks’ from the middle of the cauliflower, about 1″ thick.
Brush with the marinade making sure that some finds its way into all of the nooks and crannies.
Place steaks on a baking tray and cover with foil (not tightly) and roast for 20 minutes. Remove foil and roast for another 10 minutes, turning once.
