Mediterranean Chicken Flatbread: The Flexible Chef Style

This Mediterranean chicken flatbread started life as a change of plans. We were meant to set off in the campervan today, stopping at a supermarket on the way. Plans changed, and here we are at Casa Adora until Monday. So I'm making do with what's on hand: leftover chicken, frozen pitta bread, tinned goodies — and keeping an eye on one very interested greyhound.

Ingredients

Pita bread (from freezer)

Cooked chicken (breast or leg, shredded or sliced)

Hummus

Cheddar, feta, Parmesan (mix or use whichever you like)

Tinned red peppers, olives, Guindillas (drained/sliced)

Dried herbs: oregano, thyme, or mixed Mediterranean

Spices: smoked paprika, chilli flakes (optional)

Habanero hot sauce for humans!

For the greyhound:

Small morsel of chicken + a tiny bit of plain pita (no cheese or spices)

Instructions (Casa Adora Kitchen Version)

1. Preheat oven

Heat to 200 °C / 400 °F (or use the grill).

2. Prep the pita

Thaw if frozen.

Spread a thin layer of hummus over each one.

Sprinkle a little smoked paprika and dried oregano over the hummus for depth.

3. Layer chicken & veg

Toss shredded chicken with a pinch of paprika or chilli flakes for humans (skip for dog portions).

Spread chicken evenly over pita.

Add tinned red peppers, olives, and Guindillas, alternating colours for a pretty finish.

4. Add cheese

Sprinkle feta first, then cheddar, then a dusting of Parmesan.

Layering cheeses keeps it melty and prevents clumping.

5. Bake

Bake 8–12 minutes until cheese melts, edges crisp.

Optional: broil for 1–2 minutes at the end for extra bubbly tops.

6. Habanero drizzle

Mix 1–2 tsp habanero sauce, 1 tbsp olive oil, ¼ tsp paprika, pinch of dried herbs.

Drizzle over the flatbread after baking for a punchy finish. I use my own SUNSTRIKE Habanero — but any good hot sauce works.

7. Serve

Stack the two pitas or serve side by side.

Slice into wedges for easy eating.

For your greyhound, give a small morsel of plain chicken and pita — they’ll be delighted. 

Campervan Gas Hob Version

If you want to make a flatbread on the gas hob:

1. Prep

Thaw pita if frozen.

Spread a thin layer of hummus.

Top with chicken (plain for dog, or sprinkle a little paprika for humans).

Add any drained tinned veg you like.

Sprinkle cheese for humans, leave dog portion plain.

2. Cook

Heat a non-stick or cast-iron pan over medium-low.

Brush a tiny bit of olive oil on the base for crispiness.

Place the pita in the pan, cover with a lid for 2–3 minutes to melt the cheese and warm the toppings.

Remove lid for 1–2 minutes to crisp the base.

3. Serve

Drizzle habanero sauce for humans.

Give your greyhound their chicken + pita morsel on the side.

Slice or fold for easier handling in the campervan.

Tips for the Best Mediterranean Chicken Flatbread

Contrast is key: tangy feta, melty cheddar, smoky paprika, spicy drizzle (for humans).

Cheese placement: feta underneath cheddar keeps it creamy.

Visual appeal: alternate colours for toppings.

Greyhounds love plain chicken — skip the spices and cheese.
