Chilli–Lime Soy Drizzle

Adjust quantities as needed
Ingredients
- 3 tbsp soy sauce
- 1 tbsp lime juice
- Zest from ½ lime
- 1 tsp honey or brown sugar
- ½ red elongated chilli, finely chopped
- 1 tsp grated ginger (optional)
- 1 tbsp neutral oil
- Black pepper
Method
- Mix soy, lime juice, zest, honey, chilli, and ginger.
- Warm oil in a small pan.
- Add the mixture and bubble for 30–45 seconds until slightly thickened.
- Remove from heat, add pepper, and adjust:
- More lime for brightness
- More honey if the chilli bites
- A splash of water if too intense
This creates a glossy, aromatic chilli lime soy sauce perfect for drizzling.

- Spoon buttery mash into a soft oval.
