Tuna Steak with Sesame Oil, Tahini, and Poppy Seed Dressing

There is a wonderful depth of flavour in this tuna steak sesame oil recipe. Living in rural Spain, I often look for ways to bridge the gap between fresh Mediterranean ingredients and the bold, nutty notes of Asian cuisine. This dish does exactly that, combining a perfectly seared fish with a rich, velvety sesame tahini dressing.

If you are looking for a healthy tuna steak dinner that feels like it belongs in a high-end bistro but can be whipped up in a tiny campervan kitchen, this is the one for you. In Andalucía, we are blessed with incredible Almadraba tuna, and while I usually keep it simple, the addition of a seed crust adds a spectacular texture that shouldn't be overlooked. The secret lies in that crust—a mix of seeds that provides a fragrant, toasted crunch to contrast the tender, melt-in-the-mouth fish.

The Ingredients for Tuna Steak Sesame Oil recipe

(Serves 1)

  • 1 fresh tuna steak (approx. 200g).
  • 1 tbsp tahini (plain or toasted).
  • 1 tsp toasted sesame oil.
  • 1 tbsp sesame seeds (a mix of black and white looks best).
  • 1 tsp poppy seeds.
  • A generous squeeze of lemon juice.
  • A pinch of sea salt.

Method

  1. Prep the Crust: Press your sesame and poppy seeds firmly onto both sides of the fish. This is the heart of the tuna steak sesame oil recipe, as the seeds protect the flesh from the direct heat while releasing their oils.
  2. Whisk the Dressing: In a small bowl, combine the tahini, sesame oil, and lemon. This sesame tahini dressing should be thick but pourable; if it seizes up, simply add a teaspoon of warm water and whisk until smooth.
  3. The Sear: Get your pan smoking hot. Use a tiny drop of neutral oil and sear the tuna for only 60–90 seconds per side. You want the seeds beautifully toasted, but the middle of the steak should remain pink and succulent.
  4. Serve: Plate the fish alongside some wilted greens or a crisp salad. Drizzle the dressing over the top and enjoy a healthy tuna steak dinner that takes less than 15 minutes from start to finish.
