When you have a ginormous bunch of fresh mint you need to do something with it like Chicken Curry with Mint or this easy supper.

Sauté onion in a little olive oil until nearing soft then add crushed and chopped garlic. Cook for a further minute then add some diced courgette, give things a good stir… whilst this is cooking grate over some nutmeg, a sprinkle of white pepper and some dried oregano. Also, add some frozen peas if you wish. After a couple of minutes add chopped mint.

Meanwhile, heat a saucepan with water then when it’s boiling add pasta of your choice and turn the heat down so that you have a rolling boil.

Grate some parmesan cheese and set aside.

When the pasta is cooked according to the packet instructions, less one minute, drain making sure to retain a spoonful of the boiling liquid then add the pasta to the other ingredients gently stirring to make sure that everything is mixed through. If things are dry then add the retained pasta water. Now it is time to add the parmesan before serving with sprigs of fresh mint and a grind of black pepper. Salt is not necessary.

It is at its best when sat upon a roof terrace, sipping something dry and very chilled whilst watching the sun slip behind the olive groves on the mount that is Monte Lope Alvarez.
