Pear Juice Recipe with Rocket, Celery and Lemon

This one started as a fridge audit. There were pears from Marta's store, a bag of rocket that needed using, two stalks of celery, and half a lemon. The centrifugal juicer was already on the worktop.

Rocket in a juice sounds wrong until you try it. The pepperiness that makes it interesting in a salad translates into something bright and slightly bitter in a glass — it cuts through the sweetness of the pear in a way that nothing else in the fridge would have done. The celery adds a clean, mineral note. The lemon ties it together.

This pear juice recipe is not one I planned. It is one I made from what was there, drank on the patio in the afternoon sun, and immediately decided to make again.

Why This Pear Juice Recipe Works for Gut Health

Pears are one of the most fibre-rich fruits you can juice — high in pectin, a soluble fibre that feeds beneficial gut bacteria and supports the gut lining. They also contain sorbitol, which has a gentle laxative effect and supports gut motility. The juice is milder and sweeter than the green version, which makes it a useful alternative on days when the kale and ginger feel like too much.

Rocket brings glucosinolates — the compounds that give cruciferous vegetables their peppery bite and their gut health credentials. Celery contributes apigenin, an anti-inflammatory compound, and a small amount of prebiotic fibre. The lemon adds vitamin C and brightness.

This is a gentler gut health juice than the green one — less assertive, more approachable. It belongs in the same daily rotation.

Pear Juice Recipe — The Ingredients and Method

Makes 1 glass (approx. 250–300ml)

Ingredients

  • 2 medium pears, cored and quartered
  • Large handful rocket (approx. 30g)
  • 2 celery stalks, roughly chopped
  • ½ lemon, juiced separately

Method

Feed the pears, rocket and celery through the centrifugal juicer in batches — alternate the rocket with the harder pear and celery to help it through.

Juice the lemon separately using a citrus juicer. Stir into the juice.

Drink immediately. This pear juice recipe oxidises quickly — the colour and the pepperiness both fade fast.

Notes

Rocket is hit and miss at Marta's store in the village — the supermarket in Martos is the more reliable source. Buy more than you need; it wilts quickly and a large handful disappears into the juicer faster than you'd expect.

Pear ripeness matters. An underripe pear produces very little juice and almost no sweetness. Use pears that give slightly when pressed — the juice will be considerably better for it.

The lemon is not optional. Without it the juice is flat and one-dimensional. With it, the whole thing lifts.
