Pan Fried Veal in Balsamic with Capers

Pan Fried veal in balsamic with capers holds a special place in my memory. It was a dish prepared by Jacamo, a waiter at a local Italian restaurant my (ex) wife and I frequented. One afternoon, we visited for lunch, only to find nothing appealing on their blackboard menu. As regulars, we had already sampled everything on their standard menu.

Sensing our disappointment, Jacamo took the menus from us and disappeared into the kitchen. A short while later, he emerged with a delightful surprise: veal in balsamic with capers.

How to Make Pan Fried Veal in Balsamic with Capers

To recreate this dish, start by flattening two pieces of veal and cutting them into thin slices. Dredge the slices in a bit of seasoned flour.


Heat a generous amount of olive oil in a frying pan and sauté the veal in batches if necessary to avoid overcrowding the pan.


Once all the meat is browned, return it to the pan and generously sprinkle with balsamic vinegar. Allow the vinegar to mingle with the olive oil as it continues to cook. If the mixture seems too dry, add a splash of chicken stock.

Next, add a small handful of rinsed capers and a pinch of dried thyme to the pan. Stir the ingredients together and let them cook for about a minute. Finally, season the dish to taste with salt and pepper before serving.

This simple yet flavourful recipe brings back fond memories of that spontaneous and delicious meal. The tangy balsamic vinegar, combined with the briny capers and aromatic thyme, creates a harmonious blend of flavours that perfectly complements the tender veal.

It's a dish that not only satisfied our hunger but also added a touch of culinary adventure to an otherwise ordinary day.
