A crisp, cool salad for people who love cucumber flavour but hate the heartburn – this pepino salad recipe swaps standard cucumber for a gentler, low-bitterness Andalusian variety, with all the crunch and none of the punishment.

The Backstory: When Cucumber Fights You

For years, cucumber and I had a complicated relationship. I loved its clean crunch, its summer freshness, its ability to brighten a plate – but it didn't love me back. Every time I ate it, I'd get that familiar burn rising in the chest. Classic cucumber heartburn.

Then I moved to rural Andalucía and discovered something quietly life-changing: pepino.

Not pepino dulce, the sweet melon-like fruit – but the local Andalusian pepino: a firmer, crunchier, low-bitterness cucumber variety with tougher skin and a gentler personality. Peel it, slice it, salt it, and suddenly all the cucumber joy returns without the burn.

This salad is a celebration of that discovery.

Pepino Salad Recipe: German-Style Gurkensalat

A cool, vinegary, lightly sweet salad with the aromatic lift of dill seeds – perfect beside rich dishes like baked parmesan-crusted cod, grilled meats, or anything that needs a refreshing counterpoint.

Ingredients

  • Pepino – 1 medium, peeled and thinly sliced
  • Salt – ½ tsp
  • White wine vinegar – 1 tbsp
  • Dill seeds – ¼ tsp, lightly crushed
  • Sugar – ½ tsp (optional but very German)
  • Olive oil – 1 tbsp
  • Black pepper
  • Garlic powder, tiny pinch (optional)

Method

Peel the pepino fully. The skin is where bitterness and irritation hide.

Slice thinly – 2–3 mm. Gurkensalat should be silky, not chunky.

Salt the slices and leave 10 minutes. This draws out water and softens the pepino.

Squeeze gently to remove excess liquid. Essential for the classic texture.

Bloom the dill seeds. Mix vinegar, crushed dill seeds, sugar, pepper, and garlic powder. Let sit 5 minutes so the seeds soften and release their aroma.

Add olive oil, whisk, and toss with the pepino.

Rest 5 minutes before serving.

Why This Works for Heartburn-Sensitive People

Cucumber contains cucurbitacins, bitter compounds concentrated in the skin and around the seeds. These can trigger reflux in some people.

The local pepino – the Andalusian variety – has:

  • Lower cucurbitacin levels
  • Firmer flesh
  • Cleaner flavour
  • Less bitterness

Peel it, salt it, and it becomes a heartburn-friendly cucumber with all the crunch and none of the punishment.
