Ras el Hanout is a Moroccan spice blend and is very easy to make at home. The spice list is extensive but if you make a paste,it will be worth it. Trust me.
Ras al Hanout is Arabic for “head of the shop” and implies a mixture of the best spices the seller has to offer, recipes vary, of course, with as many as 100 ingredients but I’ll settle for a dozen or so. In the absence of fresh rose petals I use a few drops of rose petal water.
Toast:
Cumin seeds
Coriander seeds
Fennel sugar
Black peppercorns
Cinnamon or Cassia bark
Cardamon pod
Star anise
Clove
Then whiz the above with:
Shallot
Garlic
Ginger
Sweet Smoked Paprika
Lemon Juice
Rapeseed Oil
Chilli Flakes
Sugar
Rose Petals (if you happen to have any handy)
Ground Mace
Ground Nutmeg
Place in a sterilised jar with a slick of oil over the top it will last in the fridge for quite a while.
