Roasted Poussin with Rosemary, Potatoes and Vegetables

Roasted poussin is one of the quickest and most satisfying roasts you can put together — 40 to 45 minutes and it's done. This roasted poussin recipe is loosely inspired by Jamie Oliver's Hamilton Poussin, with rosemary in place of bacon and sage, and a roasting tin full of carrots, shallots, garlic, and par-boiled potatoes.


INGREDIENTS

  • 1 poussin
  • Olive oil
  • Fresh rosemary
  • Potatoes, par-boiled and diced
  • 2–3 garlic cloves, chopped, plus whole cloves for the tin
  • Black pepper
  • Sea salt
  • Carrots, roughly chopped
  • Shallots, peeled
  • 1 whole fresh tomato
  • Splash of white wine, cider, or beer for the gravy

Jamie Oliver Inspired Roasted Poussin — The Method

Preheat the oven to 180°C (fan).

Par-boil the diced potatoes until just tender, then drain. Toss with olive oil, chopped garlic, rosemary, and black pepper.

Rub the poussin all over with olive oil — I used oil previously used for preserving sun-dried tomatoes, which adds a little extra flavour. Stuff some of the potato mixture into the cavity and arrange the rest around the bird in the roasting tin along with the carrots, whole garlic cloves, shallots, and tomato.

Roast for 40–45 minutes until the skin is golden and the juices run clear.

Remove the poussin and vegetables to a warm plate and cover loosely with foil to rest.

Roasted Poussin — Quick Pan Gravy

Drain off the excess fat from the roasting tin. Add a good splash of white wine, cider, or beer to the pan juices and cook over a high heat on the hob, scraping up the caramelised bits, until reduced to a light gravy. Serve alongside the poussin and vegetables with your choice of greens.

Roasted poussin is a useful cut for solo cooking — it portions perfectly for one, cooks in under an hour, and takes on flavour beautifully. Par-boiling the potatoes first is essential; they won't cook through from raw in the time the bird takes.
