Sitting on my plot of land in Sierra de Gata, I’m enjoying today’s cooler 25°C weather, grateful for a slight break from the recent heat. With the sun casting gentle rays, there’s no better time for something fresh, light, and deeply satisfying. This salmon bruschetta flatbread is exactly that—a delicious mix of textures and flavours, ideal for a simple yet fulfilling meal.
