The best thing about a slow cooker is that it does not need you. Autumn 2024: just back from a campervan road trip – van to unpack, dogs to walk, and the usual chaos of returning home. The Crock-Pot went on before any of that started. A chicken leg, cannellini beans, leek, carrot, a splash of white wine, and eight hours on low. By the time everything had been unpacked and Issy & Poppy had been walked, there was dinner waiting. Casa Adora smelt like autumn.

INGREDIENTS
- 1 chicken leg (thigh and drumstick), dusted in cornflour
- ¼ large onion, sliced
- ¼ leek, sliced
- ½ carrot, sliced into rounds
- ½ celery stalk, sliced
- 1 garlic clove, crushed
- 50g cooked cannellini beans
- ½ tbsp olive oil
- 150ml chicken stock
- 50ml dry white wine
- 1 tsp tomato purée
- 1 tsp Dijon mustard
- ½ tsp smoked paprika
- ¼ tsp dried thyme
- ¼ tsp dried rosemary
- 1 bay leaf
- Salt, pepper and celery seeds to taste
- Fresh parsley, chopped, to serve
How to Make Slow Cooker Chicken Casserole
- Heat the olive oil in the slow cooker insert or a frying pan. Sear the chicken on both sides until golden. Remove and set aside.
- Sauté the onion, leek, carrot and celery for 3–4 minutes. Add the garlic, tomato purée, smoked paprika, thyme and rosemary and cook for another minute.
- Pour in the stock and wine. Stir well, then add the bay leaf, cannellini beans and chicken.
- Cook on low for 6–8 hours or high for 3–4 hours.
- Serve scattered with fresh parsley, with crusty sourdough alongside.
The Dijon mustard and smoked paprika do most of the work here — the sauce has depth without any effort. The cannellini beans thicken things slightly and soak up the cooking liquid beautifully.
