Vanlife Cooking: Ternera Ribs Stew with Tomato, Pimentón & Celery
There’s something deeply comforting about a slow-cooked one-pot meal after a day running around for a hot shower, shopping (food and non-food) and laundry. I’m parked up at my Hermoso Campo, the temperature is sitting pleasantly in the mid-20s°C, and although it’s warm, this ternera ribs stew tomato pimentón celery is an absolute delight to eat as the sun sinks behind the trees.
Cooking in a campervan kitchen means keeping things simple, but that doesn’t mean sacrificing flavour. This dish, made with tender ternera ribs and infused with smoked and sweet paprika, is rich, savoury, and satisfyingly rustic. It’s the sort of dish that fills the van with tempting aromas and turns a basic hob into something quite special.
The key to this one-pot ternera ribs recipe is layering flavour. Start by browning the ribs in olive oil to give them colour and depth. Then build the base with cebolla frita (those handy little tins of caramelised fried onions you’ll find all over Spain), garlic, red chilli, and a handful of chopped veg – carrot, celery, green pepper, and diced turnip.
