Cooking Lamb Chops in a Campervan: A Thunder-Seasoned Feast

There’s a special kind of joy in cooking lamb chops on the road—especially when your kitchen is a campervan, your view is a vineyard, and thunder rumbles softly in the distance. On our way to cooler climes, we pulled into a motorway services stopover. It had all the essentials: motorhome bays, a restaurant, showers—and unexpectedly, a view that could rival any wine estate. With a bottle of red from Salamanca breathing beside me, I fired up the gas and got to work.
Cooking Lamb Chops with a Beer Finish
Thin lamb chops demand speed and confidence. I seasoned mine with chilli flakes and cracked black pepper, then dropped them into a hot pan with a few mint stalks. The sizzle was instant, and the aroma bold and earthy. After a quick sear on each side, I added a dash of beer—just enough to lift the caramelised bits from the pan and infuse the meat with a malty depth. This is campervan cooking at its most satisfying: fast, flavourful, and deeply rewarding.
Mint Garlic Sauce, Blended on the Go
While the lamb rested, I reached for my secret weapon: a small USB blender. Into it went fresh mint, garlic, extra virgin olive oil (EVOO), and apple cider vinegar (ACV). A quick blitz, and out came a vibrant mint garlic sauce—sharp, herby, and silky smooth. It’s the kind of sauce that makes lamb sing, and the blender made it effortless, even in a tiny camper kitchen.
A View, a Storm, and a Perfect Plate
As I ate, thunder rolled gently across the hills, promising a welcome drop in temperature. The vineyard beyond the fence glowed in the fading light, and the scent of mint mingled with the earthy tang of rain on dry ground. It might have been a motorway services stop, but with a plate of lamb chops, a glass of red, and the drama of the sky above, it felt like a five-star escape.
