Birthday Lunch Inspired My Own Cheesy Cod Timbale

It was my birthday recently, and to celebrate I met up with some friends for lunch at one of our favourite local spots. Nothing fancy, just good food and good company—one of my favourite birthday lunch ideas. I ordered a Spanish classic: Timbal de Bacalao con Puré de Patata y Salsa de Pimientos—a beautifully layered cod timbale recipe with mashed potato and roasted red pepper flavours.

I enjoyed it so much that a few days later, I created my own version at home, giving it a personal twist. Instead of making a pepper sauce, I stirred some gently sautéed leeks into the mash for depth of flavour and topped each cod timbale with mature cheddar and a few slices of roasted red peppers. The result? Rich, satisfying, and perfect for a solo birthday treat or a shared meal.

Here’s my version of this comforting cod timbale recipe—ideal if you're after simple yet impressive birthday lunch ideas.

Cod timbale recipe

Timbal de Bacalao con Puré de Patata y Pimientos Rojos
(Cod Timbale with Mashed Potatoes and Red Peppers – Cod Timbale recipe)

Serves 2 (or 1 hungry Phil)

Ingredients

For the cod & mash:

200–250g desalted cod (or soaked salt cod/white fish like hake)

2 medium potatoes, peeled & cubed

1 small leek, finely sliced & gently fried

Splash of milk

1 clove garlic, minced

Black pepper to taste

Topping:

A handful of grated mature cheddar cheese

A few slices of cooked, peeled red pepper

Instructions

  1. Cook the potatoes
    Boil until tender, then mash with milk, black pepper, garlic, and the sautéed leeks.
  2. Prepare the cod
    Gently cook until flaky. Remove bones/skin and fold into the mash. Keep the texture chunky.
  3. Assemble
    Use a ring mould to form timbales. Top each one with grated cheddar and red pepper slices. Grill lightly to melt the cheese.

Serve with a crisp rocket salad and a lemony dressing or, in my case, a fresh red chilli lightly charred.

No ring mould? Use a mug or ramekin and flip carefully.
