Grey, rainy Fridays call for comfort food that’s fuss-free and satisfying. I picked up a whole Rosada fillet, perfect for a quiet dinner for one: pan-cooked Rosada with baby clams, green beans, and new potatoes. This initial Rosada fish recipe requires minimal prep but delivers maximum flavour.
Ingredients
- Whole Rosada fillet
- Handful of baby clams
- New potatoes, halved
- Green beans, trimmed
- 1 small onion, sliced
- 2 garlic cloves, thinly sliced
- Olive oil
- White wine or fish stock
- Sea salt & pepper
- Fresh parsley
- Pinch of chilli flakes
Method
- Boil potatoes until just tender. Blanch green beans for 3–4 minutes, then cool in ice water.
- Heat olive oil in a skillet. Sauté onions and garlic until soft.
- Add baby clams with a splash of white wine or fish stock. Cover until clams open, about 3–5 minutes.
- Place the Rosada fillet gently on top of the clams. Cover and cook 4–6 minutes until opaque and easily flaked.
- Toss in potatoes and green beans to warm through. Sprinkle with parsley, drizzle with olive oil, and add smoked paprika or chilli if desired. Serve immediately.

Day 2: Rosada & Clam Fish Pie with Saffron – A Resourceful Rosada Fish Recipe
Using the trimmings from Friday’s fillet, I made a saffron fish pie, leaving me an ample, thick fillet for Sunday dinner. This Rosada fish recipe is creamy, aromatic, and perfect for a chilly evening.
Ingredients (Serves 2)
- 1 Rosada fillet (~200–250g), cut into chunks
- Handful of baby clams (~100g)
- 2–3 medium potatoes, peeled and chopped
- 1–2 tbsp butter + splash of milk/cream
- 1 small onion, finely sliced
- 1 small carrot, finely sliced
- 1–2 sticks celery, finely sliced
- Few green beans, sliced thinly
- 1–2 tbsp olive oil
- 150ml vegetable stock (or fish stock)
- 50ml cream or crème fraîche (optional)
- 4–6 saffron strands, steeped in 1–2 tbsp warm stock
- Salt, pepper, pinch of nutmeg or smoked paprika
Method
- Boil potatoes and mash with butter, milk/cream, salt, pepper, and nutmeg.
- Heat olive oil in a pan. Add onion, carrot, celery, and green beans; cook gently until softened (5–7 mins).
- Steam clams with a splash of stock until they open; reserve cooking liquid.
- Add saffron infusion, stock, and reserved clam liquid to vegetables. Bring to a gentle simmer. Stir in cream if using.
- Gently fold in Rosada chunks and clams, cooking 3–4 minutes until just opaque.
- Pour mixture into an ovenproof dish. Spoon mashed potato on top, roughing the surface with a fork.
- Bake 200°C / 180°C fan for 20–25 mins until golden and bubbling.

Day 3: Mediterranean Fish Bake with Mozzarella
With the ample thick fillet left, I created a Mediterranean fish bake using green beans, fresh baby clams, and mozzarella. This is a standout Spanish fish recipe that uses storecupboard flavour boosters like anchovies and sun-dried tomatoes.
Ingredients
- Rosada fillet (thick piece)
- Tin of tomatoes
- 1 small onion, sliced
- 2–3 garlic cloves, chopped
- Thinly sliced green beans
- Leftover fresh baby clams
- 2–3 anchovies in oil
- A few olives in olive oil with garlic
- Small handful of shredded sun-dried tomatoes in oil
- Dried oregano, paprika, salt & pepper
- Mozzarella ball, torn into chunks
Method
- Preheat oven to 200°C.
- Sauté onion in olive oil until softened. Add garlic, paprika, and oregano.
- Stir in tin of tomatoes and season. Simmer 5–10 mins.
- Add green beans, clams, anchovies, olives, and sun-dried tomatoes; stir gently.
- Lay the Rosada fillet on top. Bake 10–12 mins until cooked through.
- Remove, scatter mozzarella over the top, and bake 3–5 more minutes until melted. Serve with crusty maize sourdough.
