There’s something deeply comforting about a dish that just sits and gently simmers away, filling the van (or kitchen) with the kind of aroma that makes you impatient for dinner. This osso buco with white beans and lemon zest is a fine example. It’s a one-pan wonder that’s ideal for campervan cooking, needing only a gas ring, a saucepan or frying pan with a lid, and a bit of patience.
What is Osso Buco?
Osso Buco is an Italian classic – it literally means “bone with a hole”, referring to the cross-cut veal (or beef) shank with the marrowbone in the centre. In Spain, I can usually find it sold as "Osso Buco" in the meat section, especially in larger supermarkets or butcher counters. The cut is ideal for slow cooking, and the marrow adds a lovely richness to the dish.
Osso Buco with White Beans and Lemon zest
This easy osso buco with olive oil and white beans is simplicity itself. After browning the meat, you sauté onion, carrot, and garlic – the aromatic base for so many good things. Add a bay leaf, a pinch of thyme, a flick of red chilli flakes, and pour over chicken stock. It’s a slow-simmered osso buco in chicken stock and herbs, and with the lid on and the heat low, you can more or less leave it be for 90 minutes while you sip something cool and contemplate a sunset.
With about 15 minutes to go, in go the beans – I used white beans this time, but butter bean are also great. They soak up the cooking juices like sponges. A bit of lemon zest at the end lifts everything beautifully.

This campervan osso buco recipe with thyme and chilli flakes doesn’t demand any fancy kit – just a decent pan with a lid and a low flame (a diffuser helps if your gas ring tends to scorch). It’s not fast food, but it’s unfussy and tastes like something much more elaborate.
Serve it with whatever you’ve got to hand – crusty bread, couscous, or even tinned new potatoes warmed through in the same pan. It’s a proper one-pan meal, full of flavour and very forgiving.
Whether you’re parked up in a quiet forest clearing or simply making dinner at home, this osso buco with white beans and lemon zest is slow food worth waiting for.
