RidgeMonkey Chicken Recipes
If youโre living the vanlife or cooking solo in your campervan, finding easy, low-fuss meals can be a challenge. This RidgeMonkey garlic & herb chicken recipe is perfect for one-pan campervan cooking โ itโs quick, uses minimal ingredients, and pairs beautifully with leftover potatoes and a fresh salad. Youโll get a hearty, satisfying meal without needing an oven or a mountain of washing up. This is one of my favourite one-pan vanlife meals.

Ingredients for Campervan Cooking
2โ3 small skinless, boneless chicken thighs
1 tsp garlic powder
1 tsp dried herbs (thyme, oregano, rosemary)
Sea salt & pepper
1 tbsp olive oil
50 ml water or stock (optional)
Leftover new potatoes (sliced or halved)
Salad: lettuce, red onion, carrot, with a drizzle of olive oil
Tip: Using leftover potatoes is perfect for reducing waste and saving time while cooking off-grid in a campervan.
How to Cook Garlic & Herb Chicken in a RidgeMonkey
Prep the chicken
Pat dry and season with garlic powder, dried herbs, salt, and pepper.
Heat your RidgeMonkey pan
Add olive oil and warm over medium heat.
If using a multi-cooker lid, cover to trap steam for juicier chicken.
Brown the chicken
Cook thighs 5โ6 minutes per side until golden brown.
Add liquid for juiciness
Add 50 ml water or stock and cover.
Reduce heat slightly and let simmer 5โ7 minutes until cooked through.
Warm the potatoes
Push the chicken to one side of the pan and add the sliced leftover potatoes.
Campervan cooking tip: Toss the potatoes in oil and seasoning for extra flavour.
Prepare the salad
Toss lettuce, red onion, and carrot with a drizzle of olive oil. Keep it fresh and crisp.
Serve straight from the pan
Spoon chicken juices over the potatoes for extra flavour.
