Ingredients for Campervan Cooking

2–3 small skinless, boneless chicken thighs

1 tsp garlic powder

1 tsp dried herbs (thyme, oregano, rosemary)

Sea salt & pepper

1 tbsp olive oil

50 ml water or stock (optional)

Leftover new potatoes (sliced or halved)

Salad: lettuce, red onion, carrot, with a drizzle of olive oil

Tip: Using leftover potatoes is perfect for reducing waste and saving time while cooking off-grid in a campervan.

How to Cook Garlic & Herb Chicken in a RidgeMonkey

Prep the chicken

Pat dry and season with garlic powder, dried herbs, salt, and pepper.

Heat your RidgeMonkey pan

Add olive oil and warm over medium heat.

If using a multi-cooker lid, cover to trap steam for juicier chicken.

Brown the chicken

Cook thighs 5–6 minutes per side until golden brown.

Add liquid for juiciness

Add 50 ml water or stock and cover.

Reduce heat slightly and let simmer 5–7 minutes until cooked through.

Warm the potatoes

Push the chicken to one side of the pan and add the sliced leftover potatoes.

Campervan cooking tip: Toss the potatoes in oil and seasoning for extra flavour.

Prepare the salad

Toss lettuce, red onion, and carrot with a drizzle of olive oil. Keep it fresh and crisp.

Serve straight from the pan

Spoon chicken juices over the potatoes for extra flavour.

RidgeMonkey pans are perfect for minimal washing, ideal for vanlife meals.

My mobile culinary studio has a pretty spectacular front door today. This view of the Sierra de Gata foothills is the backdrop for today's RidgeMonkey chicken recipe. Life on the road is better when you have a place like this to call home.

The Practical Side of Vanlife in Spain

Use the lid: traps heat and cooks chicken faster.

Gentle heat: RidgeMonkey pans get hot quickly — reduce heat after searing to avoid drying out skinless thighs.

Minimal washing: cook potatoes and chicken in the same pan to save water.

Extra flavour: sprinkle a pinch of paprika or chilli flakes while simmering.

Wonky park-ups, proper adventures, genuine freedom. This recipe also features in my Campervan Cooking Recipes hub — the complete collection of recipes actually cooked on the road in Florie.
