My Morrison family tree goes back to 1598 in Clackmannanshire. The DNA results confirmed what I'd long suspected — which explained a great deal: the porridge, the man bag, and the ability to find something useful in a ham bone. These Scottish recipes are the edible evidence.

My Scottish granny, Agnes Isabella, was born in 1883 and trained in service. She ran her household on a strict seven-day menu cycle, skimmed stock with the discipline of someone who'd learned in somebody else's kitchen, and dispatched the eleven-year-old to the fishmonger with a standing instruction: if it's not flapping on the slab, don't buy it. I didn't write any of it down at the time. I've been reconstructing it ever since.

These are traditional Scottish recipes — some faithful, some adapted for a kitchen in Andalucía, some built from memory. All of them are worth cooking.

Soups & Broths

Scotland has always known what to do with a stockpot. These are Scottish recipes built on good bones — clear stock, pearl barley, whatever the season offers.

Cock-a-Leekie Recipe — A Traditional Scottish Soup
Bone-in chicken thighs, leek, pearl barley, and prunes — the prunes are not optional. Sixty minutes, one pot, genuinely good.

Braised Cabbage in Ham Stock — My Granny's Recipe
Agnes Isabella's braised cabbage — grated onion, grated carrot, white cabbage, and a clear ham stock skimmed with service-kitchen discipline. Four ingredients. Nothing wasted.

Scotch Broth Recipe — One Lamb Shank, Properly Made
Pearl barley, yellow split peas, shredded lamb and root vegetables simmered low and slow until the broth turns pale and cloudy. One Spanish lamb shank, properly used.

Partan Bree — A Traditional Scottish Crab Soup
Partan is the Scots word for crab, bree means broth. Made with buey de mar at Casa Adora, and rooted in Agnes Isabella's Montrose kitchen and the inshore fleet she knew by instinct.

Orcadian Oatmeal Soup — A Traditional Scottish Recipe
One of the oldest dishes in the Scottish kitchen — root vegetables and fine oatmeal sweated in butter, simmered in stock and milk until thick and warming. Made at Casa Adora with white turnip in place of swede.

Burns Night 2012: Monte Lope Álvarez, Andalucía. Two friends, a bottle of whisky I wasn't drinking, and a haggis my brother had smuggled from England. My Uncle John had said the Selkirk Grace in Cumbria a decade earlier. Some things travel.

Haggis simmered in the bag, swede mashed with butter, Monalisa potatoes with white pepper. The haggis came from a three-day campervan trip to the Costa del Sol. The swede came from Almería with a Saltire on the label.

Cranachan Recipe — Scottish Whisky Cream Dessert
Toasted pinhead oatmeal, whipped double cream, honey, Scotch whisky, and fresh raspberries, layered in a glass. Scotland's best pudding. I don't drink whisky — it went in anyway.

Swede and potato mashed together with butter and chives. Orcadian in origin, essential at Burns Night, and the kind of side dish that quietly improves everything it sits next to.

Balmoral Chicken — Haggis-Stuffed Chicken with Jamon
The Hairy Bikers' Balmoral chicken adapted for one and for Andalucía — haggis from the Burns Night freezer stash, jamon in place of bacon, and Agnes Isabella's Idris pattern gravy boat doing what it was made for.

Rabbit Haggis Recipe Wild rabbit meat and offal, pinhead oatmeal, jamon and warm spices, stuffed into hog casings and simmered low and slow. A wild game twist on a Scottish classic.

Smoked Trout Fish Cakes — A Scottish Recipe with Oats
Scottish trucha ahumada standing in for an Arbroath smokie, Agria mash in place of Edzell Blue, and a porridge oat crust that Agnes Isabella would have recognised. Adapted for one, with a few extra for the freezer.

Kedgeree with Smoked Trout — A Scottish Classic from a Spanish Kitchen
From khichdi to Dumfriesshire in 1790 via the East India Company, and now to a gas hob in rural Jaén. Spanish trucha ahumada standing in for smoked haddock, basmati folded through homemade garam masala and freshly ground cardamom, finished with a pinch of cayenne in tribute to Stephana Malcolm's original. A dish that has always travelled well.

Rumbledethumps Recipe — Mashed potato, cabbage and onion topped with mature cheddar and baked until golden. A traditional Scottish Borders bake and the best use of leftover vegetables.

Scottish Stovies — Agnes Isabella's Monday Plate — floury potatoes and soft carrots slow-cooked in beef dripping and dark stock until the liquid is gone and everything is coated in a sticky, almost-black reduction. No meat in the dish. No onion. Monday food, properly made.

Skirlie — The Scottish Side That Sizzles — pinhead oatmeal toasted with onion in beef dripping and butter until golden and nutty. A fast, ancient side dish, and the stuffing for a poussin.

Potted Hough — A Glasgow Classic Made with Veal
Veal shin slow-cooked until it falls from the bone, packed into a ramekin with reduced, heavily seasoned stock and left to set overnight. Glasgow working-class food at its most quietly elegant — eaten cold on toasted sourdough.


Breakfast, Desserts & Light Bites

Scots have eaten oats for centuries. By the 14th century, soldiers were reportedly carrying bags of oatmeal on campaign. At eleven years old I was eating porridge every morning in Angus — with salt or sugar depending on who got to the bowl first.

Overnight Oats — A Scottish Staple Reinvented
One part oats, two parts oat milk, a spoonful of kefir. Refrigerate overnight. Honey, cinnamon, and fruit in the morning. The Morrison family has been eating oats since 1598 — this is the low-effort version.

Traditional Scottish Breakfast — Agnes Isabella's Saturday Morning
Every Saturday and Sunday at 10 Mill Street, Montrose, Agnes Isabella produced a full Scottish breakfast without ceremony or fuss. Lorne sausage patty, tattie scones, bacon, egg, haggis, and black pudding. This is my version — adapted for a kitchen in Andalucía, where morcilla does the job and discharged pork sausages stand in for Lorne. The salt is your own responsibility.

Honey & Cardamom Whisper — A Cranachan-Inspired Scottish Dessert
Thick Greek yoghurt, pinhead oats, local Jaén honey and cracked cardamom seeds. A creation of my own, rooted in the Cranachan tradition. The cardamom whispers — that's the point.

Lorne Sausage — The Scottish Square — minced beef and pork shoulder, seasoned with white pepper, nutmeg, and coriander, packed into a loaf tin, chilled overnight, and fried in slices until golden. The Scottish square sausage, made properly.

Bread

Fife Bannock — Scottish Soda Bread with Oatmeal
Plain flour and medium oatmeal, raised with bicarbonate of soda and buttermilk, shaped into a round and baked in thirty minutes. Mrs Lindsay's recipe, more or less.

Selkirk Bannock — A Scottish Border Fruit Bread
A rich yeasted fruit bread from the Scottish Borders — strong white dough, local honey in place of sugar, and plenty of sultanas. No mixed peel. Robbie Douglas would probably approve.
