A non meat Thursday using up the last of my courgettes, aubergine and fresh coriander.

Mackerel fish cakes with Courgette, Sweetcorn and Coriander served with Bengali Beguni (fried Aubergine fritters).


It is quick and easy to knock something together especially when using tinned fish – think oily fish, omegas and all.

And the aubergine fritters are so easy. Make a batter with gram flour, baking soda, nigella seeds, cayenne pepper… and I think this can be classed as a healthy option, much better than a takeaway.

P.S. A little squeeze of fresh lemon juice will finish it off nicely.
