Making the Most of Your Supplies: A Simple RidgeMonkey Fish Bake

When living on the road, cooking with limited ingredients requires creativity. Making the most of your supplies means using up what you have before restocking, and this simple Ridge Monkey fish bake is a perfect way to do just that.

With a tin of mackerel and a few leftover vegetables, I created a hearty, one-pot meal that’s easy to cook in a campervan. The RidgeMonkey makes the process effortless, distributing heat evenly and allowing me to create a flavour-packed dish without the need for an oven.

While a RidgeMonkey isn’t an oven, it distributes heat efficiently, making it great for baking-style cooking. By using low heat and occasional flipping, you can achieve a satisfying dish without a conventional oven.

Cooking Method for RidgeMonkey recipes

I start by sautéing onion and potato over a low flame in the RidgeMonkey. Once softened, I add finely diced carrot, celery, and chopped peppers, layering the ingredients based on their cooking time. Next, I mix in tinned mackerel in oil, allowing the flavours to blend.

To bulk it up, I stir in the remainder of a tin of baked beans, then season with celery seeds, black pepper, and paprika. The final touch? Crumbling feta on top and scorching it with a flame gun for a crispy finish. If you don’t have a flame gun, simply close the Ridge Monkey and cook for a few extra minutes.

Serve with a fresh salad for a balanced van life meal—simple, delicious, and with no waste!
