This beans on toast recipe started as a quick fix and quietly turned into brunch.
No blue tins. No sugar. No gloopy sauce. Just proper cupboard food, warmed gently and piled onto toast while you’re still deciding whether it’s breakfast or lunch.
It’s cheap, flexible, and works just as well at home as it does in the campervan.
What you need
A jar or tin of white beans or chickpeas, drained
Olive oil
Garlic, finely chopped
Tomato purée (paste)
Dried oregano
A splash of apple cider vinegar
Black pepper
Toast
Feta (if, like me, you’ve got some that needs using up)
What you do
Warm a splash of olive oil in a pan and gently soften the garlic — don’t rush it or let it brown.
Add the beans or chickpeas and warm them through.
Stir in a spoonful of tomato purée, just enough to coat everything rather than drown it.
Add a good pinch of oregano and a splash of apple cider vinegar. This is what gives the beans that bright, tangy edge and stops the whole thing tasting flat.
Finish with plenty of black pepper.
Lightly butter your toast (a scraping, not a soak), pile the beans on top, then crumble feta over while everything’s still hot so it softens but doesn’t disappear.
