Creamy Poblano-Style Soup with Spanish Peppers

There's something magical about a bowl of creamy pepper soup when the evenings start to cool down. This poblano soup recipe is my Spanish twist on a Mexican favourite – made with mild green peppers that carry a gentle heat and a hint of smokiness, blended to a velvety finish.

Luckily, Spain has its own wonderful supply of mild green peppers that work brilliantly as a substitute. They may not be exactly the same, but they deliver that fresh, earthy flavour that makes this Mexican-inspired soup so moreish.

This recipe is my Spanish twist on the classic, and it’s become a regular in my kitchen whenever I want something velvety, warming, and deeply satisfying.

Poblano Soup Recipe (serves 4)

Ingredients

6 medium mild green peppers

1 medium onion, chopped

2 garlic cloves, minced

2 medium potatoes, peeled and chopped

750 ml vegetable stock

100 ml cream

1 tbsp olive oil

Celery salt & pepper, to taste

Optional garnish: crumbled cheese (feta or queso fresco), fresh coriander

Method for Creamy Poblano Soup

Roast the peppers
Place the peppers under a hot grill or directly onto a dry pan until the skins are blackened all over. Transfer them to a bowl, cover for 5 minutes, then peel, deseed, and roughly chop. It's a chore.

Cook the aromatics
Heat the olive oil in a pan and sauté the onion and garlic until soft and fragrant.

Add peppers and potatoes
Stir in the roasted peppers and chopped potatoes, cooking for 2–3 minutes to build flavour.

Simmer with stock
Pour in the vegetable stock, bring it to a boil, then reduce heat and simmer for 15–20 minutes until the potatoes are tender.

Blend to velvet
Use a hand blender to purée until smooth and creamy.

Finish with cream
Stir in the cream, season with celery salt and pepper, and warm gently without boiling.

Serve and garnish.
Ladle into bowls and top with crumbled cheese and fresh coriander if you fancy a lift of freshness.
