Easy Egg Fried Rice — A Campervan Classic

There are days on the road when the cooking writes itself. I am parked up at the área de autocaravanas in Abrucena, a small mountain town in Almería province sitting at 980 metres above sea level, the kind of place where the town hall provides free overnight parking for campervans and asks nothing in return except that you behave yourself. Florie is level, the gas is on, and in the fridge there is a container of cooked jasmine rice left over from last night. Egg fried rice was always going to happen.

This is not a dish that requires a wok. I do not have one in the van and I do not miss it. A high-sided frying pan over a single gas ring does the job perfectly well for one person, which is all I am ever cooking for. The technique is the same — high heat, fast movement, no fussing — and the result is just as good. Beaten eggs, spring onion, peas, carrots, a splash of soy sauce, a dash of sesame oil and a little white pepper. Fish sauce if you have it, which in Florie's store cupboard I usually do. That is the recipe. I told you it was easy.

The Story Behind Egg Fried Rice

Egg fried rice originated in China during the Sui Dynasty (589–618 AD), in the eastern city of Yangzhou. It was not invented as a restaurant dish or a chef's showpiece — it was invented to avoid waste. Cooked rice that has sat overnight loses moisture and hardens slightly, making it ideal for stir-frying. Fresh rice is too wet, too sticky, and clumps in the pan. Day-old rice separates beautifully.

Early aristocratic versions took things further — individual grains were coated entirely in egg yolk before cooking, creating what became known as Gold Wrapped Silver: a golden exterior concealing the white rice beneath. It was a technique more concerned with appearance than practicality, which is probably why it did not survive the journey to the campervan.

The practical version did survive, carried around the world by Chinese migrants in the 19th century. Every country they settled in found its own variation — nasi goreng in Indonesia, khao pad in Thailand, chahan in Japan, and the takeaway staple that became a Friday night fixture across Britain. All of them trace back to the same Yangzhou logic: leftover rice, hot oil, eggs, and whatever else is to hand.


The Rice — Why Day-Old Jasmine Rice Matters

The single most important thing about egg fried rice is that the rice must be cooked the day before and refrigerated overnight. This is not optional.

Fresh rice is too moist. The grains stick together, they steam rather than fry, and you end up with something closer to scrambled egg and rice porridge than egg fried rice. Day-old jasmine rice — cold from the fridge, grains separate, surface slightly dried — fries properly. It takes on colour, it absorbs the soy sauce and sesame oil without turning to mush, and each grain stays distinct.

Jasmine rice is the right choice here. Its slight fragrance and soft texture suit the dish better than basmati, which is too firm, or arborio, which is built for entirely different purposes. Cook your rice the evening before. Spread it out on a plate to cool quickly, then refrigerate it uncovered for an hour before covering. The next day, it is ready.


Easy Egg Fried Rice Recipe

Serves 1

Ingredients

  • 150g cooked jasmine rice (day-old, cold from the fridge)
  • 2 eggs, beaten
  • 1 tbsp sunflower oil
  • 2 spring onions, white and green parts, finely chopped
  • 50g frozen peas, defrosted
  • 1 small carrot, finely diced
  • 1½ tbsp soy sauce
  • ½ tsp sesame oil
  • White pepper, to taste
  • 1 tsp fish sauce (optional, but worth it)

Method

Step 1 — Prep everything first.
This cooks fast. Have your beaten eggs, chopped spring onion, peas, carrot and sauces all within reach before the pan goes on the heat. There is no time to be rummaging once you start.

Step 2 — Fry the carrot.
Heat the sunflower oil in a high-sided frying pan over a high heat. Add the diced carrot and fry for 2 minutes, stirring frequently, until it begins to soften at the edges.

Step 3 — Add the spring onion.
Add the white parts of the spring onion and fry for another minute. Keep things moving.

Step 4 — Scramble the eggs.
Push the carrot and spring onion to one side of the pan. Pour in the beaten eggs and leave them for a few seconds until they just begin to set at the edges, then scramble them gently — you want soft, just-cooked curds, not fully dry eggs. Stop while they still look slightly underdone.

Step 5 — Add the rice.
Add the cold rice and toss everything together. Break up any clumps with the back of a spoon or spatula. Keep the heat high and keep it moving — you want the rice to fry, not steam.

Step 6 — Peas, sauces, seasoning.
Add the peas and toss through. Add the soy sauce, sesame oil, fish sauce if using, and white pepper. Toss again until everything is combined and the rice has taken on colour from the soy. Taste and adjust.

Step 7 — Finish with the green onion.
Take the pan off the heat. Scatter over the green parts of the spring onion and give it a final toss. Serve immediately, straight from the pan.


Serving Suggestions

Egg fried rice is a complete meal on its own, which is rather the point of it. On the road, in the van, parked up at altitude in the Sierra Nevada foothills, it needs nothing alongside it.

If you are cooking at home and want to stretch it into something larger, it works well next to the Fish Sauce Chicken Wings with Chilli Pineapple — the sweet heat of the pineapple against the soy-seasoned rice is a good combination.
