Andy's Red Lentil Dhal — A Rochdale Kitchen Recipe

Andy cooked it in Rochdale — one pan, a handful of store-cupboard ingredients, and the kind of result that makes you wonder why you'd ever order a takeaway. Red lentils, garlic, cumin, black onion seeds, chilli, tinned tomatoes, a squeeze of lemon at the end. Simple, properly spiced, and genuinely satisfying.

Lentil Dhal Recipe — The Rochdale Version
Dhal is one of the oldest dishes in the world — a staple of the subcontinent for thousands of years, built on the same logic everywhere: lentils, water, heat, spice. What varies is the tarka — the tempered spices that go in at the start or are drizzled over at the end. Andy's version builds the spices into the base, frying cumin seeds and black onion seeds in oil before the lentils and liquid go in. The tomatoes add body and acidity. The lemon at the end lifts everything.
The black onion seeds — nigella, kalonji — are the detail worth noting. They have a faint onion-oregano flavour that sits differently from cumin, and they're what gives this dhal its particular character.
Served With
White rice alongside — basmati works well, jasmine equally so. The dhal is thick enough to eat on its own, but rice is the right call.
Ingredients
(Serves 4)
- 200g red lentils, rinsed
- 720ml water
- 5 garlic cloves, minced
- 1 tsp cumin seeds
- ½ tsp black onion seeds (nigella/kalonji)
- ½ tsp mustard seeds
- 1–2 chillies, finely chopped (to taste)
- 1 tin chopped tomatoes (400g)
- Oil for frying
- Juice of ½ lemon
- Salt to taste
To serve
- Steamed basmati or jasmine rice
Method
Build the base:
Heat a splash of oil in a heavy pan over a medium heat. Add the cumin seeds, black onion seeds and mustard seeds and fry for 30–60 seconds until they begin to pop and smell fragrant. Add the garlic and chilli and cook for a further minute, stirring.
Add the lentils:
Tip in the rinsed red lentils and stir to coat in the spiced oil. Add the tinned tomatoes and water. Stir well, bring to a gentle boil, then reduce to a low simmer.
Cook:
Simmer uncovered for 25–30 minutes, stirring frequently, until the lentils have broken down and the dhal is thick and creamy. Season with salt.

Finish:
Squeeze in the lemon juice, stir through, and taste for seasoning. Serve over rice.
Note: Red lentils catch easily as they thicken — keep the heat low and don't walk away in the final ten minutes.
