I love a curry that’s quick, fragrant, and packed with flavour — and this Indian chicken curry recipe ticks all the boxes. Apparently there are around 19 billion chickens in the world — I have no idea who counts them! China leads with 371 million, and even Bermuda boasts 30,000 chicks. Thinking about all those chickens got me wondering: if there are so many chickens, why are people still starving in some parts of the world?
Anyway, today I decided to do something delicious with 8 chicken thighs, inspired by my love for simple, home-cooked meals with big flavour. This curry is perfect for a weeknight dinner and goes brilliantly with rice or naan bread.
Ingredients for Chicken Curry Recipe
8 chicken thighs
1 large onion, roughly chopped
6 garlic cloves
Thumb-sized piece of fresh ginger root
2 tbsp oil
1 tsp cumin seeds
1 tsp fennel seeds
1 cinnamon stick
1 tsp chilli flakes
1 tbsp garam masala
1 tsp turmeric
Pinch of sugar
400g tin chopped tomatoes
250ml hot chicken stock
Fresh coriander, chopped, to serve
Rice or naan bread, to serve
Method for Garam Masala Chicken
Make a paste: Pulse the onion, garlic, and ginger in a blender until smooth. Add a drop of water if needed.
Heat 2 tbsp oil in a pan over medium heat. Add cumin, fennel seeds, a cinnamon stick, and chilli flakes. Stir-fry until fragrant.
Add the onion paste and fry until golden brown but not burnt.
Stir in 1 tbsp garam masala, sprinkle in turmeric and a pinch of sugar, then add the chopped tomatoes. Cook for about 10 minutes until the tomato juice reduces.
Cut the chicken thighs into pieces and add them to the pan, coating thoroughly with the paste.
Pour in 250ml hot chicken stock and simmer until the chicken is tender and the paste is thickened.
Sprinkle with freshly chopped coriander and serve with rice or naan bread.
