Sauerkraut Scrambled Eggs on Sourdough — A Gut-Healthy Breakfast for One

Sometimes I stand in the Casa Adora kitchen wondering what to have for breakfast. If I don't feel like wandering into the village for a tostada, the decision tends to drift. By the time I've settled on something, it's closer to brunch than breakfast — which is, frankly, fine by me.

This is what happened the morning I made this. There was a jar of homemade sauerkraut in the fridge, eggs on the counter, a heel of sourdough that needed using, and ghee in the pan. Twenty minutes later I had one of the better breakfasts I've made at Casa Adora — and one of the most gut-friendly.

Sauerkraut Scrambled Eggs — Why This Works

Three ingredients here are doing serious gut health work. The sauerkraut brings live lactobacillus cultures — the same beneficial bacteria that make fermented foods so valuable for the microbiome. The sourdough contributes complex grain structure and the residual benefits of slow wild-yeast fermentation. The ghee — clarified butter, lactose and casein-free — is easier to digest than regular butter and may have a direct beneficial effect on the gut lining through its butyrate content.

None of this is engineered. It's just what was in the kitchen.

The one rule: the sauerkraut goes in cold, off the heat, at the very end. Heat kills live cultures. A minute in a hot pan and the gut health story disappears. Fold it through the finished eggs and serve immediately.

Sauerkraut Scrambled Eggs on Sourdough — The Recipe

Serves 1

Ingredients

  • 2 free-range or organic eggs
  • 2 tbsp water
  • ¼ tsp fine sea salt
  • 1 tbsp ghee
  • ½ small red onion, finely chopped
  • 1 garlic clove, crushed and chopped
  • 75g homemade sauerkraut
  • 1 thick slice sourdough, toasted

Method

Melt the ghee in a small pan over a medium-low heat. Add the red onion and cook gently for three to four minutes until softened but not coloured. Add the garlic and cook for another minute.

Whisk the eggs with the water and salt until just combined — don't overwork them.

Reduce the heat to low. Pour the eggs into the pan and leave them for a moment before drawing them slowly across the base with a spatula, folding rather than stirring. Pull the pan off the heat while the eggs are still slightly underdone — they'll finish in the residual heat.

Fold the sauerkraut through the eggs off the heat. Serve immediately on a thick slice of toasted sourdough.

The sauerkraut goes in cold at the end — this is not optional. Heat kills the live cultures. Fold it through off the heat and serve straight away.

  1. I have a far less healthy version of scrambled eggs on Sourdough, but I won't trouble you with it just now 😉

    Although, in it's defence, it does involve fresh chives.
